Apple Chutney and Cranberry Mini Naan Pizzas


12 ounces Monterey Jack cheese, sliced 1/8-inch thick, chopped to bite size pieces
2/3 cup dried cranberries (sweetened)
1 1/2 cup feta crumbles
2/3 cups chopped walnuts
1 tablespoon finely chopped scallion
12 mini naan rounds (4-inch diameter)

For the Apple Chutney
3 cups apples slices (Peel and core apples. Cut into 8 wedges then slice 1/8-inch thick.)
5 tablespoons water
1 tablespoon apple cider vinegar
1/16 teaspoon salt
1 1/4 teaspoon all-purpose flour
1 1/4 teaspoon cinnamon
1 1/4 teaspoon ground ginger
1/2 teaspoon ground clove
5 tablespoons honey


To make the chutney: In a medium saucepan, add water, apple cider, and apple. Sprinkle flour over apple. Add salt and spices. Stir, cover and place on medium heat. Cook for 5 minutes. Stir in honey. Continue to cook until apples are tender. Total cooking time 7-10 minutes depending on the original firmness of the apple. Remove from heat. Allow to set and cool slightly.

Preheat oven to 400° F. 

Assemble each naan round as follows: spread on a full tablespoon of chutney. Follow with a few pieces of Monterey Jack, some cranberries, feta, walnuts, and a pinch of scallion.

Place rounds on a lightly greased baking sheet. Bake until the Monterey cheese is melted, about 7-8 minutes.

Makes 12 pizza rounds.
