Ham and Peas Macaroni Alfredo:
1 pound box casserole macaroni
1 stick butter, cut into large chunks
2 cloves garlic
1/2 pound deli or leftover ham, sliced 1/4-inch wide strips
1 cup frozen peas, defrosted and at room temperature
1 3/4 cups freshly grated Parmesan cheese
1 pint light cream
1 cup whole milk
1/4 teaspoon salt
1/4 scant teaspoon black pepper
INSTRUCTIONS:
Slice ham into 1/8” x 1/4” x 1 1/2” strips. Set aside.
Cook pasta until al dente according to package directions.
While pasta is cooking, add butter to a large saucepan on medium heat. Using a grater or microplane, grate garlic into butter. Cook and stir for about 2 minutes. Do not let the butter or garlic brown.
Add light cream, milk, and salt, stirring frequently. Let come to come to a simmer. Add cheese, stirring until mixture thickens, about a minute. Gently fold in peas and ham.
Drain pasta. Add to sauce, stirring to incorporate. Adjust seasoning to taste. Serve immediately.
