Christmas Cream Cake


You Will Need:

2 large eggs (I used Free Range)

1 cup fine white caster sugar

For Vanilla flavour: 2 teaspoons pure vanilla essence

1 cup full unwhipped cream

2 cups plain flour

2 heaped teaspoons baking powder

To Make:

Beat the eggs with the sugar until thick and creamy.

Add the cream.

Beat well.

Add the sifted flour and baking Powder.

Mix well and pour into an 8-inch/20cm cake tin lined with baking parchment paper.

Ice as desired.

(I used vanilla icing for this vanilla cake).

Variations For Other Occassions:

Chocolate - Add 2 Tablespoons of Dark Cocoa Powder to the flour step. Ice with dark chocolate icing.

Ginger - Add 1 heaped teaspoon of ginger powder to the flour mix.

Ice with ginger butter icing.

Lemon or orange -  Add 1/4 cup lemon juice before adding flour. Ice with 

Coffee - Add 1 Tablespoon coffee powder to flour mix.

Ice with coffee icing.

Spice -  Add 1 Tablespoon of mixed spice to flour mix.

Ice with butter icing. Sieve some mixed spice powder over the moist icing.
