This is made by first lightly cooking some of the ingredients in a skillet for just a few minutes, then finishing by cooking in a Crock Pot with all the ingredients mixed for about 4-5 hours
These ingredients and cooking info is for an approx 7 Quart Crock Pot
Ingredients:
*Hillshire Farm Polka Kielbasa – 3 packages
Buy at Walmart
*Dark Red Kidney Beans – 3 cans
*Yellow Onion – buy 2 large, but will probably only use about 1 ½
*Olive Oil
*Ketchup – ¼ cup or maybe just a tad more
*Worcestershire sauce
*Black pepper
*Tabasco sauce
*Oregano
*Beef broth – 1 box for crock pot mixture, then a couple of cans or so for rice

*Shredded cheese – I usually buy a block of cheese and shred it myself rather than a bag of pre-shredded cheese. It usually tastes fresher when shredding yourself.
Preparation:
1) First, take the 3 polka kielbasa packages, and cut into small round pieces, not too thick (I usually do this the night before and put the pieces in a container in the refrigerator)
2) Then, wash the kidney beans and let them dry (I usually do this the night before then put the kidney beans in a container in the refrigerator)
3) Cut the yellow onions, and then grind them in a food processor. You don’t want them to be too big, but also you don’t want them completely pureed.
Get a big enough skillet for all of these things to fit in. Heat the skillet with some olive oil in the bottom. Put these three things in.
Then, while in the skillet, shake in a little bit of Worcestershire sauce, some Tabasco sauce, oregano, and some black pepper. Stir that into the mixture and let this cook on medium for probably 7-8 minutes or so. You want to kind of let the skillet lightly cook and sear the kielbasa pieces. Don’t burn them, but just a little cooking to them.
Preparation in Crock Pot:
After the mixture has cooked in the skillet for a few minutes, put that mixture into the empty crock pot.
Then, pour into the crock pot mixture the box of beef broth, until it starts to cover the mixture. I usually pour it so it’s just over the mixture so that when it’s ready to eat, there is enough broth juice to kinda put on the plate so it’s not dry.
Then, put in about 1/4 cup ketchup or so. Don’t overdo it on ketchup.
Then sprinkle in some more Tabasco sauce, Worcestershire sauce, oregano, and black pepper. Kinda light, not too much.
Then, turn all that mixture so everything mixes in well with the mixture and beef broth.
Once this is done, put the crock pot on high for about 4 hours or so. The mixture will probably light boil some during the time it’s cooking.
Preparation of rice:
You can generally follow the instructions on the box for amount of broth and rice.
***Use beef broth, don’t use water!!!!!!!!!!
I believe the instructions will have you bring the broth to a boil, then stir in the rice. Once the broth and rice starts to slightly boil again, then reduce the stove temp down to about 1-2 and cook for about 5 minutes. Then it will tell you to remove and let it sit for another 5 minutes.

Serving:
Let each person put a bed of rice on their plate. Then let them spoon the crock pot mixture over that. I usually have a spoon that doesn’t drain so they can spoon some of the broth juice over the mixture.
Then they can put cheese, more Tabasco sauce, etc over that on the plate
