Breakfast Potato Pie
Ingredients:
1 6 ounce package hasbrown potato mix with onion
1 quart hot milk
**Or use frozen hash browns (3 cups) with 1/2 cup milk or more if needed
5 eggs
1/2 cup cottage cheese
1 cup (4 ounces) shredded swiss or cheddar cheese
1 green onion, chopped
1 teaspoon salt
1/8 teaspoon pepper
4 drops of hot sauce
6 slices backon, cooked and crumbled
Paprika
Directions:
1) Cover has browns with hot water. Let stand 10 minutes. Drain well
2) Beat eggs. Add potatoes and remaining ingredients except bacon and paprika
3) Pour into a well-greased 10-inch piepan.
4) Sprinkle with bacon and paprika.
5) Cover and refreigerate at least 8 hours
6) Place cold piepan, uncovered in cold oven. Bake at 350 degrees for 35 minutes or until potatoes are tender and eggs done
Yields 6 to 8 servings.
