Beef Stroganoff - Recipe From Joan
Serves 4 people
Ingredients:
2 Sticks butter
2 lb Sirloin or chuck, or round steak
1 or 2 Green Peppers
1 Medium Onion
1 Tbsp Worcestershire sauce
2 Tbsp Red wine vinegar
1 cup Heavy Whipping cream
2 cups Sour cream
1 can Beef consumme (preferred over beef broth)
Salt and Pepper
Garlic Powder
Mushrooms (optional)
Hot pepper sauce
Directions:
1) Melt in dutch oven
2) Freeze meat partially for easier slicing
3) Slice meat very thin in strips (or you can cut in cubes)
4) Quickly saute meat in butter until brown
5) Add half to one green peppers (cubed), chopped onion, and saute along with beef
6) Add a little salt and pepper. About a half tsp each
7) Add a little garlic powder. At least half tsp.
8) Add 1 Tbsp Worcestershire sauce
Lower Heat
9) Add 1 cup drained mushrooms
10) Add a little hot pepper sauce
11) Add about 2 Tbsp of Red wine vinegar
12) Stir everything together
13) Add 1 cup heavy whipping cream
14) Add 2 cups sour cream
15) Cover and turn to lowest setting
16) Let it cook very slowly for 1 1/2 hours or longer until meat is fork tender
17) Serve with Rice
Use Beef Consumme Soup in place of water when preparing the rice
18) Add a little saffron if desired (optional)
