Enchiladas made by Joan over the years. Recipe given by Patty Mankin in August 1968
Ingredients
1 can enchilada sauce (mild)
2 cans chili without beans
Package of enchilada corn tortillas (12)
2-3 medium onions, chopped
1# Longhorn cheddar grated or other cheddar cheese
Directions
Preheat oven to 350 degrees
Mix enchilada sauce and chili and heat until very hot
Dip tortillas in hot grease just for a few seconds - just to make them flexible. As you dip into oil, then place them in a stack on a piece of paper towel.
On top of each tortilla put chopped onion and grated cheese. Wrap tortillas around mixture and fasten with a toothpick.
12 enchiladas will fit into a 13 x 9 dish (sprayed with Pam)
Pour chili mixture over enchiladas and top with any remaining cheese.
Bake until bubbly at 350 degrees for about 30 minutes
