Ingredients:
1 10 oz. Can of Rotel (the Original Rotel is spicy, get MILD if you don't like spicy)
1 16 oz. Package of Velveeta, cut into 1-inch cubes
1 Bag of Tortilla Chips (round or triangle - your favorite)
1 bottle of your favorite BBQ Sauce
BBQ Meat - make your own or store bought
Directions:
Begin with prepared BBQ meat - cooked, warmed and ready to go (make your own or store bought).
Warming your Tortilla Chips is optional. If you choose to - heat oven to 350 degrees, line a cookie sheet with aluminum foil, put the entire bag of chips on tray and put in oven while you make the Rotel.
Empty the can of Rotel (original if you like spicy or mild if you don't) in a microwavable container with lid/or cover of some sort. Add Velveeta and microwave until melted, checking and stirring occasionally - start with 3 minutes. Stir and continue until melted.
Pull hot chips from oven, evenly spread hot Rotel/Velveeta over chips, top with BBQ Meat and then squeeze extra BBQ sauce in a zigzag pattern over the entire dish.
