Strawberry Hedgehogs...
These Strawberry Hedgehogs might just be the cutest Valentine’s Day treat ever! Not only are they adorable, but they’re also delicious, easy to make, and so much fun to decorate. If you’re looking for a creative, no-bake treat that will steal hearts this Valentine’s season, these little chocolate-dipped strawberry hedgehogs are exactly what you need!
I used @stoverandcompany Eleven O’One Deluxe White Chocolate Melting Wafers to coat the strawberries, adding a few milk chocolate wafers to get that light brown hedgehog color. 🦔🍓 Then, for the spiky texture, I experimented with both slivered almonds and crushed nuts/brown sprinkles—so if you want to make these, you can pick whichever method works best for you!
To really bring the woodland theme to life, I served them with Little Debbie Swiss Rolls turned into chocolate “logs” 🪵, donut hole acorns, raspberry mushrooms 🍄, and Flake bars decorated with chocorooms and tiny chocolate snails 🐌. The final dessert spread looked like a whimsical forest scene, making these Strawberry Hedgehogs even more magical!

1️⃣ Preparing the Strawberries
I started with fresh, ripe strawberries and left the green tops on to resemble a hedgehog’s spiky fur.
After washing and drying them completely, I set them aside while I prepared the melted chocolate.
2️⃣ Melting the Chocolate
I melted white chocolate wafers and added a few milk chocolate wafers to achieve that light brown “hedgehog” shade.
To keep the chocolate smooth, I used the double boiler method, but you can also melt it in the microwave in 20-second intervals, stirring in between.
3️⃣ Dipping & Decorating
I dipped each strawberry into the melted chocolate, leaving a small portion of the front uncovered (this creates the hedgehog’s little face!).
While the chocolate was still wet, I experimented with two variations:
Slivered almonds (placed individually for a true spiky effect).
Crushed nuts/brown sprinkles (for a quicker, textured look).
Once set, I used melted dark chocolate to dot on tiny eyes and a cute nose using a toothpick.
4️⃣ Creating the Woodland Scene
To make it even more magical, I served these hedgehogs with:
🪵 Swiss Roll “Logs” – Brushed with melted chocolate and cut in half to resemble logs.
🍄 Raspberry Mushrooms – Raspberries placed on mini marshmallow “stems.”
🌰 Donut Hole Acorns – Donut holes dipped in chocolate and topped with a chocolate-covered pretzel piece as the “acorn cap.”
🐌 Flake Bar Tree Stumps with Chocolate Snails – I placed chocorooms (mushroom-shaped chocolates) on Flake bars and added little chocolate snails.
