INGREDIENTS
💗 Wicked Pinwheel Cookies 💚
(makes 22 cookies)
Ingredients:
½ cup butter, softened
1 cup granulated sugar (I used monkfruit sugar)
1 egg
¾ cup @lifewaykefir
1 tsp vanilla extract
2 ½ cups Gluten-Free 1:1 flour
1/4 tsp baking soda
1/2 tsp baking powder
½ tsp salt
2 tsp beet powder (or red food coloring)
1 1/2 tsp matcha (or green food coloring)
DIRECTION
Cream the butter and sugar together. Add the egg, kefir, and vanilla and blend together.
Add the flour, baking soda, baking powder, and salt and mix until all is mixed together, being careful not to overmix.
Separate the dough evenly (about 2 cups for each). Mix beet powder with half to dye the dough pink. Mix matcha with the other half to dye the remaining dough green. Place in the refrigerator for 30 minutes.
Roll each color dough into a 1/4 inch thick rectangle approximately 8x11. It is helpful if you roll the dough out on a piece of parchment paper with another piece on top.
Flip the green rectangle on top of the green rectangle and carefully peel back the parchment paper. Carefully roll into a long log.
Cover in plastic wrap and place in the fridge for at least 4 hours.
At the end of the chilling time, preheat the oven to 350F and line 2 baking sheets with parchment paper.
Slice the log into 1/4 inch circles. Place on baking sheets and bake for 12 minutes. If desired, add edible glitter.
