Preheat oven to 425F. In a microwave, wrap 1 large russet potato in wet paper towel and heat until cooked through, about 4-5 minutes. While microwaving, chop 16 slices of @JonesDairyFarm Canadian Bacon into cubes. Heat bacon in a large skillet for 4-5 minutes or until just crisping up. In a large bowl, add potato meat to bowl, leaving skin behind. Mash using a potato masher. Add in 1 brick softened cream cheese and ¾ cup Greek yogurt and continue to mash. Once blended, stir in 1 cup shredded cheddar cheese and 3/4 of the chopped Canadian bacon. Then add in ½ tsp garlic powder, ½ tsp onion powder, 1 tsp salt, and ½ tsp pepper. Stir until all combined. Add to a baking dish of your choosing and top with remaining bacon bits and crushed potato chips. Bake for 20 minutes. Top with fresh chives and serve with chips! Enjoy! ♥️
