When the air is crisp and the skies are gray, there’s nothing better than a warm, comforting dessert to lift your spirits. This fresh, low-sugar, light-yet-cozy pudding is the perfect treat for a chilly January day—bringing warmth, nostalgia, and just the right amount of indulgence without being heavy or overly sweet.
I’ve always loved desserts made with lots of healthy eggs, and this pudding is inspired by a recipe my mum used to make for us when I was little. It was always the perfect pick-me-up on dreary winter days, filling the kitchen with the most delicious, comforting aroma. I’ve given it a modern twist by reducing the sugar significantly, but don’t worry—it’s still every bit as delicious, creamy, and satisfying!

Lemon pudding
1 tbsp butter, just melted �65g sugar
2.5 tbsp plain flour
2 lemons, zested and juiced �4 eggs, yolks and whites separated�250 ml whole milk
Preheat the oven to 170c.
�Place the butter, sugar, flour, zest, juice and egg yolks in a bowl and mix. Quickly add the milk and mix really well.
�In a separate clean bowl, beat the egg whites to stiff peaks. Fold the whites by hand gently into the lemon mixture.
�Pour the mixture into a baking dish (24 x 16cm) , or individual small oven proof dishes. Bake at 180c for 24 mins (16 mins for smaller ramekins), or until mixture is just set. You want it to still be soft in the middle as it will keep cooking as it cools down.
�Serve warm.
