INGREDIENTS
1 tbsp. Simple Truth® Olive Oil
1 small yellow onion, diced
2 small bell peppers, diced
3 cloves garlic, minced
1⁄2 packet Simple Truth Organic™ Spicy Taco Seasoning
2 cans (15 oz.) Simple Truth Organic® Black Beans, rinsed and drained
3 cups Simple Truth Organic™ Baby Spinach
1 can (10 oz.) red enchilada sauce
3⁄4 cup Simple Truth Organic® Mexican Style Blend Finely Shredded Cheese
10 corn tortillas (total amount varies on shape and size of baking dish!)
Optional For Serving: Simple Truth Organic™ Gluten Free Non-Dairy Sour Cream, avocado slices and cilantro
DIRECTION
Step 1
Preheat the oven to 425 degrees F. Lightly coat a 9×13 or similar in size baking dish with nonstick spray. Set aside.
Step 2
Heat the olive oil in a large, deep skillet over medium. Once the oil is hot, add the onions, peppers and seasoning. Cook until beginning to soften, 4-5 minutes.
Step 3
Stir in the black beans, garlic and spinach. Let the spinach wilt a little. Remove from the heat. Spread a thin layer of the enchilada sauce into the bottom of the prepared baking dish. Fill the tortillas with bean filling, roll snugly, then arrange side by side in the dish, seam-side down. Pour the remaining sauce over the top, then sprinkle the top generously with cheese.

Bake for 15-20 minutes, until hot and bubbly. Let cool slightly, then serve with desired toppings.
