Tabouli


Tabouli is a traditional Lebanese salad that is healthy and delicious. This refreshing salad is a staple in my family and it reminds me of when my grandmother used to make it for my family. The smell of chopped up parsley and mint takes me back to summer. I used to stand by her side in the kitchen and watch her make it. She has passed this recipe onto me and now I make it for my family.

Ingredients

  • 2 bunches Parsley(washed and dried)

  • I bunch Mint (washed and dried)

  • 3 tomatoes

  • 3 spring onions or 1 small spanish onion

  • 1 lemon (juiced)

  • 2 tbs burgul (crushed wheat)

  • 1 tsp Salt

  • 1 tsp 7 spice pepper

  • ¼ cup extra virgin olive oil

Equipment

  • Large bowl

  • Sharp knife

  • Chopping board

  • Spoon to mix the salad


Method

  1. Finely chop the parsley and mint and place in a bowl.

  2. Dice the tomatoes and onion and add to the bowl.

  3. Sprinkle the burgul in and mix all the ingredients together.

  4. Add the lemon juice, extra virgin olive oil, salt and pepper and mix well.

  5. Taste to check for seasoning before serving.

  6. Enjoy on its own or with a protein dish.
