Mum's Chicken in Sauce with Spaghetti

Introduction

This procedural text is about how to make my Mum's Magical Chicken in Red Sauce with Spaghetti. Follow this delicious recipe in order to have a juicy chicken with pasta and grated cheese. I have chosen this recipe because it is a comfort, family meal for me and my family and it is a traditional Greek recipe that has been past down from my family. This recipe will magically transport you to the cooling water and warm sand on the hot summer’s day in all around the country of Greece. Ingredients

  • 4 Chicken Maryland Pieces ( or 4 Thigh Cutlets + 4 Drumsticks )

  • 1/4 Cup of Extra Virgin Olive Oil

  • 650ml Chicken Broth or Stock

  • 1 Jar of Napoletana Sauce

  • 4 Garlic Cloves, Minced

  • 1 Tablespoon Tomato Paste

  • 1 Cinnamon Stick or 1/2 Tsp Ground Cinnamon

  • 3 Bay Leaves

  • Salt + Pepper

  • 1 Packet of Gluten Free Spaghetti ( Optional to add Traditional Pasta )

  • Optional for any type of grated cheese


Equipment

  • Large, Wide Pot

  • Bowls

  • Serving Spoon

  • Stove

Method

  1. Gather a large pot with extra virgin olive oil. Season the chicken carefully and position the skin side down first. Place the chicken over a high level heat and cook until the chicken looks like a golden brown colour. Gather the garlic cloves and add to the pot and then flip the chicken over to cook until the underside is golden as well.


  1. Meanwhile, add the chicken stock, Napoletana sauce, cinnamon and bay leaves. Put all of this gently into the pot, without splattering it, with the garlic, chicken and extra virgin olive oil.


  1. Making sure, plenty of the chicken is submerged in the juicy, red sauce, bring to boil. Once it is boiled, decrease the heat. Put the lid on the pot and let the chicken with the sauce simmer for 40 min. Then add an extra 10 min to your time, uncover, increase the heat to a higher level and boil the thickened sauce. Once it is cooked, turn off the heat and place your lid onto the pot until ready to serve.


  1. While the chicken is cooking, prepare the pasta by looking at the instructions on the packet instructions and to your liking. When pasta is cooked, take the water out by draining it and get ready to serve onto the plates.


  1. Finish this amazing meal with plenty of Parmesan cheese, or for a more rustic, ancient feeling flavour, add Greek “Parmesan cheese” called Mizithra. The Parmesan cheese is optional.


  1. Serve the pasta onto all the plates first, then directly after, place the chicken pieces over the pasta with plenty of sauce and serve with your serving spoon immediately into the bowls.
