Lamington
Today I am going to teach you how to make delicious Australian lamingtons. Lamingtons are an iconic Australian dessert that will bring back memories of walking down to Bondi beach and surfing through the blue water, then drying off and strolling across the sand.
Ingredients
2 and ¼ cups self raising flour
2 tsp baking powder
185 g margarine
¾ cup caster sugar
1 tsp vanilla essence
3 eggs
4 cups pure icing sugar
⅓ cup drinking chocolate
4 cups of desiccated coconut
⅓ cup water
Equipment
A lamington pan (or you can use a baking tray if you dont have on)
An oven
A bowl
A whisk
A wire rack or a cutting board
Method
Preheat oven to 180C
Grease a lamington pan or a baking tray
Sift flour and baking powder into a bowl and set aside
Beat margarine and sugar until creamy, then add vanilla essence and eggs and beat until combined
Fold through sifted flour and one third cup water, then pour the mixture into the tray
Bake for 20 minutes or until firm
Let it cool then cut into squares of your desired size
Sift icing sugar and drinking chocolate into a bowl and add enough hot water to make a smooth mixture
Place bowl over a hot water bath and stir
Dip squares of cake into icing and roll in the coconut
Allow your Lamingtons to set on a wire rack or cutting board
Now you have a delicious Lamington to share with your friends and family on a hot or cold beautiful Australian day.
