Bruschetta
A Taste of Italy
Remember the days walking through the old streets of Tuscany in summer. These are the parts of travel that I truly miss, but with this recipe I can be transported back. With the fresh aroma of plump tomatoes and fragrant basil, this bruschetta recipe is one I'm sure you will love.
Ingredients
olive oil
6 slices of Ciabatta bread
3 tomatoes
1 garlic clove cut in half
handful of basil
salt to taste

griddle pan

knife

Method
Gather the ingredients and equipment
Place the griddle pan onto high heat to warm.
Roughly chop the tomatoes into small chunks over a medium-sized bowl, ensuring the juice is kept with the tomatoes.
Tear the basil leaves into 1cm pieces to release the flavour and aroma. Add to the tomatoes and mix it through with your fingers.
Pour a generous glug of olive oil into the bowl to cover the basil and tomatoes.
Add salt and pepper to taste.
Meanwhile, place the sliced ciabatta onto the griddle pan. Cook until the ciabatta turns golden brown and crisp.
Remove the bread from the pan. Rub the toasted bread with the cut side of the clove of garlic.
Pile a generous amount of the tomato topping to the bread and serve with a fresh sprig of basil.
Optional: Add a drizzle of balsamic glaze across the bruschetta
