Everyone has a favorite cookie texture. For some of us that favorite texture changes based on mood or circumstances. For example, if I'm eating a cookie by itself I tend to prefer chewy cookies but if I'm having the cookie with coffee I lean more towards crunchy cookies. Wouldn't it be nice if we could change a recipe to make it the texture that we want? Well, that's certainly possible but first we need to understand what makes a cookie chewy vs. crunchy vs. crisp.
