Lab Objective:
You will understand how to shape bagels so they don't fall apart while boiling.
Lab Goal:
You will make bagels that maintain their shape when boiled and have the correct texture when baked.
While you are making your bagels you will reflect on what worked best when you were shaping the bagels.
When your bagels are finished you will take a picture of the finished product with you in the picture.
After tasting one of your bagels you will complete the Bagel Lab Reflection and upload your bagel picture to the Google Form.
To shape a bagel roll your dough out into a 12 inch rope. Then overlap the ends to create a circle. Roll the joined ends so they don't come apart later in the boiling water.
After allowing your bagels to rise overnight place them in boiling water for 60 seconds. This gives them the traditional NY style bagel texture.
The recipe we use in class originally came from The Culinary Institute of America Baking and Pastry Textbook. It was an excellent recipe but we made a few changes to lower the sodium, replace hard to find ingredients, and improve the clarity of the instructions for our classroom purposes. This recipe makes the best bagels and this is usually one of the favorite recipes of the entire semester! My family loves them and my 7 year old son once ate three of them in one morning!!
Plain bagels can be made without any toppings or you can add your favorite "Everything Bagel Seasoning".
Heart bagels are made by adding red food coloring to the plain bagel dough as it kneads. Then they are shaped as hearts rather than rounds.
Tie Dye bagels are a fun twist that children (and adults) love. Divide your dough into multiple parts and add food coloring as you knead each part.
Now that you have finished your baking and you've tasted your product it is time to complete the Recipe Reflection and submit a pic of your product.
Go to Google Classroom and find the assignment for your lab. Complete the attached Recipe Reflection form and upload your pic (selfie) to the assignment. Make sure you submit it after you upload the pic!
