Here are some more ideas to get you started.
Engage the fives senses (whenever possible)
Make leaf prints ( paint the leaf and press the print into the journal)
Make leaf rubbings
Trace the items they are looking at
Add leaves into the journal using tape
Count the birds/squirrels/insects etc.
Measure as much of the phenomena as the students can using non standard and standard units of measurement.

The height of the plants everyday by first estimating the height using units of "finger nail-size" (which is roughly 1cm) or another unit of your choosing and then use centimeters if you have a ruler or measuring tape available
Compare the height of the different plants
Perimeter of garden or container (using cm & m)
Area of garden or container (using grid paper)
Capacity of garden or container (use Litres)
How does the temperature affect the plant?
