Here are some more ideas to get you started.
Engage the fives senses (whenever possible)
Make leaf prints ( paint the leaf and press the print into the journal)
Make leaf rubbings
Trace the items they are looking at
Add leaves into the journal using tape
Count the birds/squirrels/insects/rocks etc.
Measure as much of the phenomena as the students can using non standard and standard units of measurement.

Where are all the bright colours? Where can we see bright colours in nature? Where are we less likely to see bright colours in nature? Why?
Try sorting natural objects based on size, shape or other attributes

Measure their height everyday
Which day of the week did they sprout on?
Keep track of the seeds that did not sprout
Compare the different plants according to one attribute example: shape, colour, size, position (which direction are the leaves facing)
What else do you notice? Have you learned anything about plants through your observations?
Use Non-standard units of measurement for example;
Paper clips
Fingernail length
Pencil
What else can you use?
Once you have lots of data, put it into a pictograph for each category of data collected.
