Here are some more ideas to get you started.
Engage the fives senses (whenever possible)
Make leaf prints ( paint the leaf and press the print into the journal)
Make leaf rubbings
Trace the items they are looking at
Add leaves into the journal using tape
Count the birds/squirrels/insects etc.
Measure as much of the phenomena as the students can using non standard and standard units of measurement.

NOTE: You are encourage to spend time in the outdoors Nature Journaling. However, you can also bring nature inside, look out your wonder window, have a refrigerator Safari or even observe a house plant or pet.
Task 1: You will research the different types of electricity used in Ontario. For example, hydroelectric, natural gas, nuclear plants, alternative energy sources and all others. You will give a short description of what each is.
Task 2: You will become a journalist and write an article on the James Bay Hydroelectric Project. This project has many serious impacts on the environment and the James Bay Cree people. Your article will look at all sides of this project from the developers to the James Bay Cree people and the environment. Your article will need to include the following information:
What is the project, where is it located and when was it developed?
Who was in charge of the project and who is being supplied with the energy being produced?
What has been the impacts on the James Bay Cree people? Have any measures been taken to rectify the impacts?
What has been the environmental impact? Has anything been done to help rectify this?
What is the status of this project today?
Anything else you think will help your article
Task 3: You will build a solar powered oven. Research project ideas online and start collecting items from around your home and get creating. Once you have built your oven grab some marshmallows, chocolate, graham crackers and make your own s'mores! Or try making something else that you like! Can you be in charge of cooking dessert for dinner?
NOTE: This can be used with the Nature Journaling activity at the top of the page.
