Ingredients
2 red or yellow potatoes
¼ tsp salt
1/2 tsp garlic salt (or freshly minced garlic clove)
1/2 tsp paprika
1 tsp dried thyme, rosemary, or oregano
2 Tbsp olive oil
Instructions
Preheat your oven to 425
Wash potatoes. Remove any blemishes
Cut into 1" cubes
Place into a medium sized bowl and add olive oil and seasonings, tossing to coat
Line a baking tray with parchment paper
Spread the seasoned broccoli onto the parchment paper
Bake for 15-20 minutes until golden brown, stirring halfway through
Remove from oven and allow to set for 3-5 minutes before enjoying
