Ingredients
1 baking potato (russet, large red, or sweet potato)
Optional toppings per potato:
2 Tbsp shredded cheddar cheese
1 Tbsp bacon or turkey bacon bits
¼ green onion, thinly sliced
1 Tbsp sour cream or plain greek yogurt
1 floret broccoli
2 Tbsp salsa
2 Tbsp black beans
Instructions
Scrub potato
Pierce potato with fork many times to allow steam to escape
Place onto plate. Microwave for four minutes
Check for softness and heat another minute if needed until soft
Allow to rest for one to two minutes.
Slice down the middle and add toppings
