These one-bowl brownies mean fewer dishes. Add a handful of chocolate chips for texture.
Rich in antioxidants, cocoa powder gives these brownies a super-chocolate flavor. The powdered sugar is the secret ingredient for a fudgy brownie texture.
Yield: 12 1" brownies
Ingredients
½ cup butter or for vegan brownies use ½ cup vegetable oil
1 ½ cup granulated sugar
2/3 cup cocoa powder
1/4 cup powdered sugar
2 eggs or for vegan/vegetarian use ¼ cup water
1 cup all purpose flour
1/2 tsp salt
Instructions
Preheat the oven to 375. Line an 8 x 8 pan with parchment.
In a glass bowl, heat butter for 10 seconds at a time or less until it is super soft and sort of melted. If it splatters, wipe out your microwave right away
Mix the melted butter or vegetable oil with the eggs. In a separate bowl, mix the sugars, flour, salt, and cocoa powder.
Mix the butter/egg mixture with the sugar/flour/cocoa powder/salt mixture.
Stir gently only until there are no flecks of flour visible. Gentle stirring will avoid activating the gluten. Read more about gluten here.
Spread brownie mixture into the prepared 8 x 8 pan. Bake for 20 minutes or until the center is set and the top is dry-looking.
Allow to cool 10 minutes before cutting into squares.
Notes
Before beginning: Clean your work surfaces, start your hot, soapy dishwater, and assemble all of your ingredients and equipment.
Plate and garnish your brownie with a dusting of powdered sugar, sprinkles, or frosting.
Mix these together for a quick frosting topping: 1 cup powdered sugar, 2 Tbsp super soft butter, 1 Tbsp milk ( or more for thinner frosting), 1/2 tsp vanilla. Add 1 Tbsp cocoa powder for chocolate frosting.
For some brain boosting superfood powers, add 1/4 of one of the following to the mixture before baking: Pureed chick peas (garbanzos), pureed cooked carrots, pureed avocado.
