Are they a fruit or a vegetable? Either way, the beneficial fats in avocados help you feel fuller longer. Avocados are a rich source of nutrients. (And technically they are a fruit).
Choose ripe avocados for this recipe. To speed up the process of ripening, place an avocado in a paper bag with an apple or banana.
Yield: 2 servings
Ingredients
1 ripe avocado
⅛ to 1/4 cup cilantro
⅛ to 1/4 of an onion
1 clove garlic
½ lime
1 roma tomato
2 slices of whole wheat, sourdough, or gluten free bread, toasted
1 -2 eggs (optional)
Salt and pepper to taste
Instructions
Flatten the garlic with the side of your chef's knife, remove the peel, and mince. Place into a large glass bowl.
Remove stems from the cilantro and mince. Add to the bowl with the garlic.
Dice the onion and tomato and add to bowl
Cut avocado sideways. Remove peel. Mash in a bowl. Add to other ingredients
Roll the lime on the cutting board and cut in half. Squeeze the juice in a small bowl or directly over the bowl with the veggies.
Mix together and season with salt.
Divide up the guacamole into as many servings that you need.
If you are using the egg, fry or cook to your preference.
Assemble your Avocado Toast by spreading the avocado mixture over the toast.
Top with the cooked egg.

Before beginning: Clean your work surfaces, start your hot, soapy dishwater, and assemble all of your ingredients and equipment.
This recipe is great (and more portable) when used as a burrito filling. Use a large, 10" warm flour tortilla or smaller corn tortillas instead of toast
