I find that the best start to the day so there is no delay or sluggishness in my character is to immediately upon waking move to the floor, commonly on my knees, this removes the temptation of curling in bed and instead swiftly summon blood to my limbs so it is time to wake. After that I put on my sandals and walk up four floors so I may meet the grocer at the entrance to the mine. He comes each day east from the city to deliver us the food we will prepare. Onions, Fish, Fesikh, Bread, Leeks, various Cheeses, Beef, Figs, Pears, Lettuce, if lucky Pork, and of course Lamb only on a day of religious celebration. Eggs are not needed as there is a stock of chickens we keep in the mine. We of course make our own beer so no kegs or casks need be delivered.
After having the men take the stores below to the kitchens they are promptwith begun being cooked to be served ten hours from start for supper. Since dehydration is a problem here, on account of the heat and limited air, withal no water but only beer we are mindful to add as little salt as possible to the stews and meals to further prevent the daze of dehydration which collapse our workers.
