A National Certificate for the New Zealand Certificate in Hospitality Cookery Level 2. You will learn about the different cookery methods, knives, table setting, vegetable cuts, baking, grilling, personal presentation, customer service and care and a whole heap more. This course will lead you into Level 3 Catering & Hospitality
Students will have the opportunity to learn the following:
1. International dishes from the regions of Italy, China and Egypt.
2. Food Safety and Storage
3. Cafe Sandwiches, Roasting, Grilling, Frying, Baking, Steaming, boiling
4. Salads, fruits and vegetables
5. Knives and its uses
6. Commercial cookery methods and their applications
7. Applying safe work methods in a commercial kitchen
