My Family Eggnog Recipe

There's nothing like coming into a warm hall in the festive season and being handed a cup of this ambrosia! Rich with eggs and cream, heavy with rum, and topped with a froth of egg whites and nutmeg, this eggnog can get you through the most trying evenings.

Get a large bowl that will hold all the ingredients listed.

Separate 12 large raw eggs into yolks and whites; save the whites for later

Beat the yolks until light in colour in the bowl

Add gradually 454 grams (1 lb) of icing sugar (confectioner's sugar) and beat until well mixed.

Add slowly, beating the whole time:

4-6 cups (2-3 pints) rum or brandy

2 quarts (4 pints) whipping cream

1 cup (8 oz) peach or apricot brandy if desired (this is optional and makes for an even sweeter nog with added fruity flavour)

Put in a cold place for 3 hours for the flavours to melt together.

Beat the reserved egg whites until stiff and FOLD them into the above eggnog. Don't beat them in or they will lose their fluffiness.

Serve in small mugs with fresh nutmeg grated over the top.

Then forget about anything else you had planned to do today...
