Stuffed Zucchini

1 medium zucchini, cut in half       1/3 cup grated Parmesan cheese

1 egg, beaten                        2 Tbsp minced onion

2 slices bread, crumbled 

Preheat oven to 350 degrees F. Scoop seeds and pulp out of cut zucchini and place in a medium bowl. Add egg, bread, cheese and onion and mix together. Put mixture back into zucchini halfs and place in a glass dish. Sprinkle with more Parmesan cheese. Bake in oven for 15-20 minutes until filling is light brown on top.
