Tortilla Crusted Stuffed Chicken Breast

4 boneless chicken breasts

4 - 4" x4" slices Pepper Jack cheese

1 jalapeno, seeded and sliced lengthwise 

1 - 4 oz can green chiles

2 eggs, beaten

Tortilla chips

cooking spray

Mexican Green Sauce

 

Preheat oven to 350 degrees.  Pound chicken breasts to a thickness of 1/4".  Place one slice of pepper jack, one long slice of jalapeno and 1 tsp of green chiles on each breast.  Roll tightly, secure with a toothpick, if necessary.  Put tortilla chips into a ziploc bag and crush, empty onto a plate.  Spray a cooking sheet with cooking spray to avoid sticking.  Dip rolled chicken breast into eggs and then roll in tortilla chips.  Place on cooking sheet.  Cook in oven for 30 minutes or until chicken is done.  Place on plate and top with a small amount of green sauce.  Serves 4.
