Texas German Potato Salad

1 lb red potatoes 1/2 cup red onion, minced

12 oz beer 1/4 cup apple cider vinegar

8 slices bacon, cooked crisp and crumbled 3 Tbsp canola oil

1/2 cup chopped cilantro

Boil potatoes in 12 oz beer and water to cover until done - approximately 20 minutes.  Cube cooked potatoes and add crumbled bacon and cilantro.  Drain bacon grease leaving about 2-3 Tbsp.  Cook red onion in bacon grease adding 2-3 Tbsp canola oil.  When onion is thoroughly cooked add 1/4 cup apple cider vinegar.  Pour hot dressing over potatoes and toss.
