Fiesta Chicken

1 can cream of chicken soup

1 cup sour cream

1 can diced tomatoes (chili ready, if available)

Sliced jalapenos, to taste

4 green onions, sliced

6 tortillas (I use whole wheat), cut into quarters

4 chicken breasts

1 small can sliced black olives

2 cups shredded cheese

In a bowl, mix together cream of chicken soup, sour cream, diced tomatoes, jalapenos and green onions.  Cook chicken breasts by boiling or in the microwave and cut into 1” pieces. In a casserole place a layer of tortillas (8 pieces), 1/3 of the chicken, 1/3 of the sauce, 1/3 of the olives and 1/3 of the cheese. Repeat for two more layers. Cook in a 350 degree oven for 15 minutes or until heated through.
