Chicken Fajitas

2 lbs boneless chicken meat, breasts or thighs

oil

cilantro

lime slices

butter

1 onion, sliced

1 green pepper, sliced

8-12 flour tortillas

diced tomatoes

sour cream

shredded cheese

salsa

 

Mix oil and cilantro in a bowl. Add lime slices. Marinate chicken in bowl 2 hours or up to overnight. Grill chicken on grill or cook in very hot cast iron skillet. Remove chicken from skillet and add butter. Saute onion and green pepper in butter until cooked through.

To warm up tortillas, get a clean dish towel wet. Wring out excess water and wrap tortillas in dish towel. Place in microwave and microwave for 1 minute.

Serve with warm flour tortillas, diced tomatoes, sour cream, shredded cheese and salsa. Enjoy!  Serves 4
