Kala is a snack tradition in my family that was originally only eaten around New Year’s eve. It's a lot of work, but now I make small portions of it every week. I also adapted the recipe a bit to make it more like a savory bread snack that I can take with me all week. My recipe is no longer vegetarian, because I add bacon or sausage and cheese.
Original Ingredients
Black eyed peas
Chili pepper (promente pika)
My added Ingredients
Bacon or sausage
Cheese
Select the beans, wash them and leave them to soak in a cool place for about 8 hours
Peel the beans
Grind the promente clean
Grind the beans together with the promente
Put the ground mixture in a deep bowl. Beat until a white frothy mass is formed
Heat the oil
Slide the mixture into the pan with a spoon
Fry the Kala in the fat and let it become golden brown.
I add bacon or sausage and cheese to the original recipe. I don't soak a whole bag of black eyed beans, just a little bit. Just enough for a savory snack any day of the week. And I don't bake it, I put it in the oven. I call it bean bread on X.
