This recipe of pumpkin pancakes is a recipe I inherited from my late grandmother and my mother. These pumpkin pancakes can be eaten all day. There is more pumpkin in them than in the American or Dutch pancakes. My mother makes them with raisins. When I make them, I leave out the raisins or replace them by nuts. I don’t like raisins. These pumpkins are more savory then the Dutch ones.
As much pumpkin as can
Water
Flour
Milk
1 Egg
Raisins or nuts or both
Clean the pumpkin and cut it into pieces
Boil the water and add the pumpkin. Let it cook for a while on low heat
Drain the water and mash the pumpkin with a fork
Add the flour, milk, egg, water, raisins and/or nuts
Mix everything well until there is a smooth batter
Heat a pan
Pour the batter into the pan in small portions and let it fry
Turn the arepa over when it is dry on the top and let it brown and cook on the other side.
