White Bean & Garlic Scapes Dip

Ingredients:

4 or 5 garlic scapes trimmed and chopped.

Juice of one lemon plus zest.

2 cups cooked white beans Canellini beans(about ¾ cup dry) cooking water reserved.

4 tablespoons olive oil or more to taste.

salt and freshly ground black pepper to taste.

Directions:

    • In a food processor, process garlic scales with lemon juice, salt, and pepper until finely chopped. Add cannelloni beans and process to a rough puree.

    • While processing, slowly drizzle olive oil through feed tube and process until smooth. Pulse in 2 too 3 T water, or more until the mixture is the consistency of a dip. Add more salt, pepper, and or lemon juice, if desired.

    • Spread out dip on a plate, drizzle with olive oil, and sprinkle with more salt.

Makes 11/2 cups
