Flax meal Skillet Bread

*Begin by preheating oven with iron skillet at 450 degrees.

Ingredients:

Dry:

1/4 flax meal

1/2 c brown rice flour

1/4 c tapioca starch (or flour)

1/2 t baking powder

1/2 xanthan gum

1/4 t salt

Wet:

3/4 C milk or 1/2 C yogurt + 1/4 C milk

1 egg

2 T olive oil or canola- 1T for skillet 1T for wet ingredients

Combine dry, then in a separate bowl, combine wet ingredients. Fold wet into the dry. Put 1T oil into the skillet. Then pour in batter. Bake for 12 minutes or until crusty. Then transfer to a wire rack after baking. Cool- might need some time in toaster.
