My Favorite Pizza Dough
1C Gluten Free All Purpose Baking Flour
1/2 C Starch- Potato or Corn or Tapioca- or 1/2 C rice flour- brown is always healthier
2 tsp Xanthan Gum
1/2 tsp sea salt
1T Olive oil
3/4C warm water
1 tsp sugar
1 egg
2 tsp yeast- or 1 package
Heat oven to 425 F.
Combine yeast, sugar, and water in the mixing bowl and let it stand for 5 minutes. Combine dry ingredients in separate bowl. Add egg and 1 Tbs oil to wet ingredients, mix, then add dry ingredients. Mix on medium for a minute or two. Spread on to a pizza sheet (I split the dough in half, put half in the freezer). To spread the dough I use a wet spatula to get the dough thin and to fill in any holes. Keep the water on warm and keep wetting the spatula. I bake for about 6 minutes, then add ingredients. Bake until cheese is turning brown....about 8-10 more minutes.
