Pesto

Ingredients:

    • 1+ cup basil

    • 2s clove garlic

    • 1/4 C grated parmesan

    • 1/4 C walnuts

    • salt & pepper to taste

    • 1/4 C Olive Oil

    • 1/4 C water

Directions:

To keep a bright green color: Blanch the spinach or basil- by quickly dropping bunches of basil into joining water- about 8-10 seconds- take it out with a strainer and plunge it into an ice bath for 20 to 30 seconds. Then make your pesto.

In a food processor pulse basil, garlic, parmesan cheese, salt and pepper until smooth. Slowly add the olive oil while pulsing. Add water to get to the consistency that you prefer.
