Shrimp Quiche
1 package of crescent rolls
1 ½ cups of Italian shredded cheese
2 Tbsp butter
1lb. Shrimp - deveined
12 thin slices pepperoni - chopped
¼ cup diced pimentos (optional)
1 ¾ cups light cream
4 eggs
Salt and pepper to taste (If you like the flavor of crab, replace salt with “Old Bay” seasonings)
Flatten out the crescent rolls in a 13x9x2 greased pan. Spread out using thumbs.
Top flatten crescent rolls with cheese.
Quickly sauté shrimp, pepperoni, and pimentos until lightly pink. 2-3 minutes
Distribute evenly over cheese.
Beat eggs, light cream, salt and pepper. Pour over shrimp and cheese.
Bake at 400ºF for 10 minutes.
Turn oven down to 325ºF and continue to bake for 30 more minutes or until custard is set.
