Ingredients
1-2 boneless chicken breasts halves per person
1-2 bags of cleaned spinach
1 ball fresh mozzarella slices or 1 bag shredded
1-2 jars of roasted red peppers
1 bottle Balsamic viniagrette
Directions
Place spinach in a 9 x 13 baking dish.
Put chicken on top.
Put red pepper on chicken.
Put shredded mozzarella on top.
Sprinkle with about 1/2 bottle of dressing
Bake at 350 degrees for about 45 minutes or until chicken is done.
Cover with aluminum foil if cheese begins to brown.
Serve over long pasta, bow tie pasta, rice or couscous.
