Cardamom Pancakes, Smoked Strawberry Jam
For the Pancakes
2c AP flour
1 ½ c Milk
½ c Sugar
¼ Vegetable oil
1tbsp Baking powder
4 Eggs
1tbs Ground Cardamom
1tsp Fresh grated ginger
1tsp Sea salt
Method:
Sift flour and baking powder into a bowl. In a separate bowl break up the eggs and add the milk, sugar oil ginger and cardamom. Gently pour the wet ingredients into the dry ingredients and incorporate until just brought together, lumps are fine. (Don't over mix or you will develop gluten in the flour and make tougher pancakes!)
For the Smoked Strawberry Jam
2 c strawberries
1 c sugar
1/4c water
1 orange zest and juice only
1 Lime juice only
Method:
Remove the stems from the strawberries and cut them into ¼. Place them on a perforated tray and smoke in a cold smoker for two hours with hickory or apple wood chips. Take the smoked strawberries and place them in as pot with the sugar, water, the orange zest and juice, and lime juice, cook over medium heat for 15 min or until the strawberries have broken down and gave up their liquid. Remove from heat and reserve
To Finish and Serve
Warm a cast iron or non stick pan over medium high heat. Pour just enough vegetable in the bottom of the pan to coat and start spooning your pancakes on to whatever size you would like, be sure to leave enough space in between the pancakes so they don't touch each other. When small bubbles start to come up to the tops of the batter, flip the pancakes and cook for 45 seconds- 1 minute. Take the pancakes from the pan and place right on serving plate, top with warm smoked strawberry Jam and enjoy
Tip
If you don't have access to a smoker you can skip that step and just add, ½ tsp liquid smoke to the strawberries while they cook or you can skip the smoke all together and the resulting jam will still be delicious!, Many people don't realize how easy and in expensive it is to make your own pan cakes from home without using the box, but its easy
