Serves:about 2 1/2 cups

Ingredients
3/4 cup heavy cream
1/4 cup unsalted butter, sliced
Pinch of fine salt
1/2 cup sugar
2 tablespoons light corn syrup
2 tablespoons water
9 ounces good quality bittersweet, or semi-sweet chocolate, finely chopped
1 teaspoon pure vanilla extract
Directions
In measuring cup with a spout, combine the cream, butter, and salt. Set aside.
In a medium saucepan, over medium heat, cook the sugar, corn syrup, and water, stirring, until the sugar is
dissolved. Increase heat to high and bring the mixture to a full rolling boil. Cook until a dark amber color,
about 1 to 2 minutes, without stirring. Remove the pan from the heat and carefully pour the cream mixture into
the sugar mixture. (Take care, since the sugar will bubble up when the cream is added.) Whisk until smooth.
OR
Hot Fudge Sauce
Ingredients
1 cup Heavy Cream
¾ cup Brown Sugar
½ Stick Butter (cubed)
2 ¾ cup Semi-Sweet Chocolate Chips
Dash salt
1 teaspoon Vanilla Extract
Directions
In a sauce pan heat heavy cream, brown sugar until sugar dissolves.
Add butter until it melts
Add chips, salt and extract, keep stirring until chips melt.
Let cool for 15 minutes. Enjoy!
