I make the dough for the noodles a day ahead and allow them to dry out.
Ingredients for the dough (noodles)
2 cups flour
2 eggs
1/2 teaspoon salt
1/4 cup shortening
Directions for dough
Rub shortening into flour and salt.
Add beaten eggs and knead dough to form into ball.
Break off portions and roll on floured surface into the thickness of 1/8 inch.
Cut into strips, then into squares or diamonds.
Put on floured tray.
Sprinkle with flour between layers.
Cover with paper towel or wax paper and allow to dry out.
Directions for chicken
Cook chicken in water with 2 bay leaves, salt, pepper, garlic, onion, celery and herb of choice.
After chicken is done, remove and reserve meat.
Strain broth and add 2 Knorr boullion cubes.
Bring to a boil and add dough squares.
Don't dump dough all at once - separate and add little by little.
Put a layer of dough and a layer of potatoes slice about 3/4 inch thick and alternate layers.
Cook with lid off for 10 minutes and lid on for 10 minutes.
I think I would also layer carrots in this dish. It's not really chicken pot pie, but chicken stew.
The noodles in this dish are really thick and sturdy and good.
