Start by sautéing some pancetta - pre-diced from the grocery store. When rendered, add a container of pre-diced red onions from the grocery store.
When the onions are soft and translucent, deglaze with tequila or vodka (we used orange vodka). Then add some shredded rotisserie chicken from the grocery store. Let it get a little brown.
Add a small can of diced green chiles. Add a can of diced tomatoes and a can of hominy and enough stock to cover. Add a tablespoon of Chinese Chile Garlic sauce. Add the juice of one lime.
Season with salt, pepper, chile powder (not chili powder), cumin, Mexican Oregano (or Herbs de Provence) .
Let come together and top with shredded cheddar or Mexican cheese and crushed tortilla chips. Voila...
