There is a local restaurant, Paradiso, that has a salad called a Rocco Salad that has charcuterie and cheese and lettuce. This is our take. Ingredients include:
Whatever type of lettuce you prefer - spring greens, romaine, etc.
Add your favorite charcuterie - salami, pepperoni, prosciutto, Jamon ham.... you name it.
Add shaved cheese - again your choice. We most often use Parmesan, Piave, aged Gouda, Gruyere, Romano, Asiago....
Add your choice of olives (green or black), peppadews or other preserved peppers, or artichokes.
I sometimes add a chopped up chicken tender too.
Anything else you want!
Dressing:
A scant 1/2 cup neutral oil (vegetable, peanut).
A little more than 1/4 cup champaign vinegar.
1 teaspoon Dijon mustard
1/4 teaspoon sesame oil
2 teaspoons Italian herb mix - the refregerated "lightly dried" kind is best but regular dried will do too.
Adjust oil and vinegar to get to you preferred acidity. Shake well and store in the fridge.
