1 lb ground chicken or turkey
Juice of 2 limes
1/2 as much fish sauce as lime juice
1 T sugar
Chicken/Turkey stock as needed.
1 serrano and 1 fresno chile
3-4 shallots
5-6 mint leaves
4-5 basil leaves
1.5 t. chile garlic paste
1.5 t lemon grass paste
1 t. garlic
A sprinkle of cilantro
And 1 bunch scallions
Salt and pepper to taste.
Sear meat. Then add and sear all veggies except scallions. Add liquids and herbs and let cook for a few minutes. Toss scallions in near the end.
Serve with large lettuce leaves (messy!) or just over the top of chopped lettuce as a salad.
