Beef gives me trouble but I can do bison, which Giant usually carries so we decided to do something different.

No real recipe for the salad. Just sautéed a shallot and a couple of slices of pancetta in olive oil and a little butter and tossed it with baby spinach with some balsamic.
Oh and we still had some low carb bread left...
