Asparagus is coated in salt, olive oil, and a little lemon or lime juice, topped with pancetta and roasted in the oven t 350 until cooked but still has some crunch.
Meat: 50% bison, 50% turkey. 1 egg, some breadcrumbs (Italian) to make the texture right, garlic and onion powder + salt and pepper to taste. I used 2 LB of meat and made three loaves.
Make a grove in the top of each loaf and fill with mozzarella cheese or the cheese of your choice. Cover the meat over this center groove.
Sauce - top with a sauce. I used KC Masterpiece barbeque sauce (Stubbs is also good) + Worcestershire sauce, tamarind hot sauce, gochujang, Dijon mustard, and a very small amount of Thai fish sauce. No, I didn't measure, just tasted until it was right.
Coat the loaves with sauce and bake at 350 until internal temp indicates they are done.
